Living overseas and living alone meant that I had to learn how to cook for myself. From learning how to cook, it was only a natural progression to learn how to bake; and chocolate is one of the primary ingredients that I often use in baking. Working with chocolate got me to experience and discover the vast differences in chocolates available. It is no surprise that the better quality chocolates often leads to better tasting products.

As I delve more into the history of chocolate, I found that although European countries are often more well-known for their chocolates than other counterparts in other parts of the world, no European country actually grow their own cacao beans as their climate doesn't allow it. The cacao plant can only grow within 20 degrees north and south of the equator...just like in the Philippines, where I was born and raised.

So it got me thinking of making it right at the source. After all, the main ingredients that goes into a good chocolate is basically just cacao beans and sugar--both of which are readily available here. All that it needs is for someone to craft it to the highest quality. I decided to be that person, went home from overseas and the rest is what you see now.
At our factory, each batch of chocolate is produced in small quantities (actually, it would be "micro" in industry standards) and overseen personally by people instead of machines. We take great care, time and effort to ensure that each step starting from the selection of the cacao bean to the final step of molding and packing, we are only offering the best we can offer.

Iloilo Dinagyang Foundation

Just like most festivals in January, Dinagyang is a thanksgiving for and a celebration in honor of Sr. Santo Nino. But it prides itself as a festival of excellent folk choreography, a showcase of Ilonggo heritage and culture. It is as grand as Iloilo's old churches and mansions. It is as crisp as pinasugbong saging, as delectable as pancit molo and batchoy.

Highlights of the Festival

The religious highlight is the fluvial procession along Iloilo River. The cultural highlights are the Kasadyahan and the Ati-atihan parades and competitions.

The fluvial procession is on a Friday of the Dinagyang week. Devotees carrying assorted images of the Child Jesus ride in motorized bancas from the mouth of the river towards the pier area where the foot parade would start and then back to the church.

Held on a Saturday, Kasadyahan is a cultural parade. The presentation is theatrical and in local color.

The Ati-atihan contest on a Sunday, is a big event. Participated in by at least twenty groups or tribe, the warriors wipe black soot all over their body and dance to the drumbeats.

Primary reason for starting the Dinagyang Festival. The festival was first started to celebrate the feast of the Sto. Nino. From a parish church festivity to honor the Child Jesus, the celebration has evolved to become a religious-cultural activity. It is now a vehicle to promote Iloilo as a tourist and investment destination.

Dinagyang Song. Dinagyang Song tells of how Iloilo got its name, how it was sold by the aborigines to the Borneans led by a Datu Paiburong. It also describes Ilonggos' proud heritage, industry and peaceful existence. It spells out hope and progress through Dinagyang.

Responses Dinagyang has been getting from audiences and media over the years. The performances have awed audiences because of its spectacle - the choreography, costumes and music are very impressive. Especially, the choreography which has been noted by no less than the National Commission for the Culture and the Arts (NCCA). The commission has tagged Dinagyang as the "Festival of Excellent Folk Choreography".

Through the years, the festival has gained national prominence and recognition by winning the national street dancing competition. Now, people know that Dinagyang is Iloilo, and Iloilo is Dinagyang!

The Sinulog Festival

The Sinulog festival is one of the grandest and most colorful festivals in the Philippines with a very rich history. The main festival is held each year on the third Sunday of January in Cebu City to honor the Santo Niño, or the child Jesus, who used to be the patron saint of the whole province of Cebu (since in the Catholic faith Jesus is not a saint, but God). It is essentially a dance ritual which remembers the Filipino people’s pagan past and their acceptance of Christianity.

The festival features some the country’s most colorful displays of pomp and pageantry: participants garbed in bright-colored costumes dance to the rhythm of drums, trumpets, and native gongs. The streets are usually lined with vendors and pedestrians all wanting to witness the street-dancing. Smaller versions of the festival are also held in various parts of the province, also to celebrate and honor the Santo Niño. There is also a Sinulog sa Kabataan, which is performed by the youths of Cebu a week before the Grand Parade.

Aside from the colorful and festive dancing, there is also the SME trade fair where Sinulog features Cebu export quality products and people around the world flock on the treasures that are Cebu.

Recently, the cultural event has been commercialized as a tourist attraction and instead of traditional street-dancing from locals, Sinulog also came to mean a contest featuring contingents from various parts of the country. The Sinulog Contest is traditionally held in the Cebu City Sports Complex, where most of Cebu’s major provincial events are held.

Puerto Princesa Underground River

The Puerto Princesa Subterranean River National Park (PPSRNP) is found in the Midwest coast of Palawan approximately 365 nautical miles south of Manila. It is located some 76 km northwest of Puerto Princesa City, facing the South China sea. It lies within portions of Bgys. Cabayugan, Marufinas, and Tagabinet, Its geographic coordinates are 10′ 10 north, 118′ 55 south.

Topography varies from flat terrain to rolling hinterlands, from hills to mountain peaks. The area is split at the center by a limestone or karst outcrop known as the St. Paul mountain range that rises 1,028 meters at its peak. The karst is 11 km long, averages 3-5 km wide and covers an area of around 35 sq. /km. It is estimated to be between 16 – 20 million years old.

The Park serves as a catchment to the Cabayugan River that flows down the slopes of Mt. Bloomfield, irrigating paddy farms before disappearing under Mt. St. Paul to become the underground river, and the Babuyan River which at 54 km is the longest river in Palawan. It provides water to local communities for domestic and agriculture use.

The PPSRNP has a population of 3,800 individuals including around 400 members of the Batak and Tagbanua, two of the seven cultural groups of Palawan. Majority of the people speak Pilipino and the local dialect Cuyunon, other dialects spoken include Ilocano and Cebuano. Most household earn their living from farming except in Sabang and Coastal areas of Marufinas, where many household depend on fishing and tourism. Indigenous People are traditionally engaged in gathering of minor forest products such as rattan (Calamus sp.)poles, almaciga (Agathis philippinensis) resin, and wild honey as the main source of income. They are also involved in upland farming and resort to hunting game to add to their food requirements.

These days, though, Bukidnon has become an interesting mix of different types of people from the various parts of the country. The province is currently home to more than a million people of different ethnic affiliations.

Ethnic history
Before the Spanish era, various migrant tribes from the Visayas islands have started settling on the land thereby driving its original settlers to the mountains. This is how Bukidnon came to be known by its name. The word Bukidnon originally referred to these people who were forced to move to the mountains due to the influx of migrant tribes. The word actually means “people of the mountains”. Through the years, the province saw a steady increase in migrant settlers which rose even higher after the Second World War when it opened its gates to different tribes coming from Cebu, Panay Island and even as far as the Ilocos regions.

The Bukidnon culture as it is today is a mixture of the various ethnic tribes that inhabit the province. However, it is still fairly easy to find the old traditional lifestyle through the people who live in its remote areas. Most of its people have managed to preserve its unique tradition and the only traces of assimilation are seen in the city.

History
Bukidnon started out as a municipality of Misamis in 1850. At that time, it was called Malay-balay. This term meant – quite literally – “few houses”. It was a municipality of Misamis until the year 1907 when it became a sub-province of Agusan by virtue of the Philippine Commission Act No. 1693. Ten years later, on March 10, 1917, Bukidnon became a separate province through the then newly-established Department of Mindanao and Sulu.

Sumilao march
The province of Bukidnon is currently in the spotlight due to the highly controversial Sumilao march. This is in protest of the conversion of a 144-hectare land located in Barangay San Vicente, Sumilao into a hog farm by a multi-national corporation. Fifty-five farmers from the area started their march through 13 provinces from Mindanao on October 10 of this year and arrived in Manila on December 3 to request for an interview with the President to address their concerns.

The property in question was awarded to the Sumilao farmers in 1995 but was reclaimed towards the Quisumbing family who were to use the land for agri-industrial purposes. The project turned out to be the San Miguel Corporation’s construction of a hog farm on the said Bukidnon property. The farmers organized the march in order to air their land issues to the government and hopefully come up with a cease-and-desist order to stop the development of the contested property. To this date, the Department of Agrarian Reform and the Malacañang are yet to provide a favorable response to the protesters from Bukidnon.
